Atarah’s Cottage Pie with Sweet Potato

So basically what I want to share is something that is really quite simple but tasty and healthy. It’s so simple because my HH brought it to my mind and showed me.

Take note that this recipe uses sweet potato instead of mashed potato. This is a healthier version that my HH showed me, takes less time and my family loves sweet potato ☺️

Ingredients:

2 tbsp cooking oil

1 large onion, chopped

3 garlic cloves

900g Beef Mince

1/4 cup bisto or gravy powder

Half cup beef stock

Tbsp BBQ spice

3 chopped tomatoes

3 sweet potatoes, peeled, chopped

2 cups mixed frozen vegetables

Cup grated Cheddar Cheese

Method:

Step 1
Preheat oven to 200°C/180°C and bake. Heat oil in the pan. Cook mince. Depending on how lean your mince is add or reduce oil. Add onion and garlic to the pan. Cook, until softened.

Step 2
Add BBQ spice and mixed veg and cook. Add gravy powder. Add stock and tomato and cook. Reduce heat to medium-low. Simmer, stirring occasionally, for 25 to 30 minutes or until thickened.

Step 3
Cut up sweet potato in circle rounds.
In another pot boil sweet potato until tender. Drain.

Step 4
Spoon mince mixture into the casserole dish. Top with sweet potato. Sprinkle with cheese. Bake for 10 to 15 minutes or until cheese is melted.

Serve and enjoy!
