My Husband led me to make myself this healthy and delicious salad a while ago. I make it in the morning and then put it in the refrigerator and eat it for lunch and dinner as a meal on its own, but you can also make it as a side dish. You can play around with the ingredients and add different things, but this is how I like to eat it.
Ingredients
- 1 cups raw broccoli, finely chopped
- 1 cups raw cauliflower, finely chopped ((if you prefer you can boil the broccoli and cauliflower for 2-3 minutes then add it to ice water to keep it crunchy, but I like it raw))
- 1/2 cups red onion / spring onions, finely chopped
- 2 boiled eggs, chopped
- 1/2 cups Almonds or any nuts, chopped
- 1/2 Bits of bacon
- 1 mozzarella cheese cut into small cubes (or any cheese you prefer, or a combination of cheeses)
- Dressing1/2 cups cup of mayonnaise
- 1/2 cups cup Greek or any plain yoghurt
- 1 tbsp lemon juice
- 1 tbsp raw honey (or to taste)
- 1/2 tsp salt and pepper to taste
Instructions
Step 1
Boil the eggs and let it cool completely
Step 2
Fry the bits of bacon until crispy an let it cool completely
Step 3
Combine the chopped broccoli. cauliflower, onions and /or nuts in a sealable bowl
Step 4
Add the cooled, chopped eggs and bacon and cheese
Step 5
Mix the ingredients for the dressing and add honey to taste, you can also add other seasoning to taste.
Step 6
Pour dressing over salad, close the bowl and keep in the refrigerator for at least an hour before you eat it.
