I've been seeing this recipe on the internet for a while now and wanted to try it for a while, I did not have all the ingredients stated on the internet, but He led me to make it with what I had on hand and it was so delicious and it's super healthy.
You will need (2 servings):
Ingredients
- 2 cups cooked quinoa (I had cooked white and red quinoa on hand. You cook it like rice, 1 cup quinoa to 2 cups water, little salt and a teaspoon of butter to prevent the water from foaming while cooking, simmer for 20-30 minutes until water is absorbed and quinoa soft). I will also try making this salad with couscous or brown rice.
- 1 tin chickpeas in brine (you can cook your own as well)
- handful of almonds (optional)
- 2 cups thinly sliced spinach, slightly steamed
- fresh parsley or any fresh herbs you have on hand (I did not have fresh herbs but added dried parsley to the dressing
- 1 Avocado
- Olive oil to roast the chickpeas (I just add enough until the chickpeas are covered)
Dressing:
- Juice of one lemon (I had fresh lemons on hand and use the leftover peel and flesh to clean my roasting pan :))
- 1 Tablespoon olive oil
- 1 Teaspoon sugar
Method:
- Drain the chickpeas (if you used tinned chickpeas) and put it in a roasting dish
-Cover with olive oil and grill it in the over or airfryer until golden brown
-While the chickpeas are roasting, chop the almonds
- Slice and steam the spinach lightly (if you like it raw you can also add it raw)
- Chop the herbs finely
- Cut the avo in cubes.
-Make the dressing: Combine the lemon juice, olive oil and sugar and mix.
-When the chickpeas are golden brown, combine all the ingredients in a bowl and mix well.
I topped my salad with sliced jalapenos. What I like about these kinds of recipes is that you can play around with what you want to add and what you have on hand.

Thanks Adina l bought a pack of Quinoa a few weeks ago so l would love to try this. I have never used chickpeas before but l do love the taste so next time I’m in the shops l will look for the tinned chickpeas ☺️
This was the first time I bought a pack of quinoa, I also wanted to try it for a long time but always forgot to look for it when I went shopping. I have never bought raw chickpeas, I want to, but haven’t seen it in the shop I went to before, maybe in my new town I will be able to find it raw. I love making these kinds of salads because you can play around with it and add whatever He leads you to add, it’s healthy and you can make a big bowl and snack on it during the day. I am sure it will be just as nice with other beans as well.
