Costa Rican “Arroz con Pollo”

A tasty Costa Rican-style arroz con pollo. This dish is ideal to share at a family gathering because of how easy it is to make and how tasty it is. We cook this for special occasions, especially birthdays!! We accompany the rice with refried mashed beans, salad, potato chips, potato tortillas, avocado, and Ketchup!!

Ingredients:

1 chicken breast

2 cups rice

2 onions

2 bell peppers

3 sprigs celery

5 garlic cloves

Cilantro (to the taste)

Annatto or another coloring for rice

To taste salt, pepper, cumin

2 carrots

1k pods

English sauce (to the taste)

Method:

Step 1
Boil the chicken breast with a sprig of celery, garlic, a little English sauce, salt, cumin, and annatto.

Step 2
When the chicken is cooked, you take it out and shred it. Strain the chicken broth and reserve. Cook the rice with the chicken broth until is done.

Step 3
In a separate pot, fry the onions, the bell peppers, the garlic, the sprigs of celery, the carrots and the pods all finely chopped
When the vegetables are cooked, add the annatto and mix well until they change color. Add the rice, and mix until the rice changes color, stir for a couple of minutes. Add the cilantro and chicken. Mix for another minute.

Step 4
Serve and enjoy!!

  3. Isabella l have never heard of a colorful coloring for the rice. But l suppose the colouring makes it look like a festive dish and why you cook it on special occasions 🙂
    We do make yellow rice (adding a small amount of turmeric) here in South Africa to eat with our curry dishes.
