Easy and Delicious Vanilla Cupcakes

I found this recipe a couple of years ago and always use it for my children's birthdays or whenever I feel like baking cupcakes. Because it is made with Buttermilk and oil it is super moist.

Ingredients (12 cupcakes):

1 Cup Buttermilk (if you don't have Buttermilk on hand, I will share at end of the recipe how you can make your own)
1 Egg
1/2 cup oil (I use sunflower oil for baking)
2 tablespoons vanilla extract
1 cup white granulated sugar
1 and 1/2 cups flour (all purpose flour)
1/4 teaspoon salt
1 teaspoon baking soda

Method:

1) Preheat oven to 350 deg F (180 deg C)
2) Line a muffin tin with cupcake liners.
3) Mix the buttermilk, egg and oil together, then add the vanilla extract.
4) Stir in the sugar.
5) Slowly add the rest of the dry ingredients while mixing.
6) Mix batter until smooth.
7) Fill the cupcake liners until 3/4 full.
8) Bake for 20 minutes. Test with toothpick if its cooked (nothing must stick to toothpick when removed)
9) Let the cupcakes cool completely before you add icing of choice.

I sometimes make my own icing, but most of the time I buy it premade from a bakery. Or I use a tin of caramel which I whip and then add that as icing.

Here is an icing recipe if you want to make your own:

1 cup / 2 sticks unsalted butter
4-5 cups powdered sugar (icing sugar)
1/4 cup cream
1 tablespoon vanilla extract

Method:
1) Mix butter until light and fluffy
2) Add 1/2 cup powdered sugar at a time and mix well every time until all the sugar is added.
3) Add the vanilla and cream (and/or food coloring ) and mix well.
4) when cupcakes are completely cooled, you can add the frosting.

***If you do not have Buttermilk on hand: Take one cup of full / double cream milk and add 1 teaspoon vinegar. Let it stand for at least 5 minutes before using in the recipe.

  1. Thank you for sharing! This comes at a time when it will be my daughters birthdays next week. I was planning on making cupcakes but I didn’t want to make them from the box. I look forward to trying this!

    1. Elda sometimes when I make them for the children’s birthdays, I add those edible, coloured sprinkles in, then it looks like confetti cupcakes. I also use vanilla extract or if I have vanilla pods on hand, the vanilla seeds. I have made them with vanilla essence, but its just not the same…although still delicious.

    1. My dear I always used to be able to make the flatest, hardest cakes and cupcakes, no matter how hard I tried it just flopped. I just couldn’t get it right, until HH led me to this cupcake recipe and I have one chocolate cake recipe that never flops. And its as easy as baking it from a box.

    1. I must admit I do not like making icing, although I sometimes make it myself 🙂 The premade tubs I buy at the bakery store are basically homemade, the lady who’s shop it is, makes it herself. I have also used the ready to use icing tubs that you buy at Pick & Pay or any of our supermarkets, they are not bad but definitely not homemade. The combination of caramel on the vanilla cupcakes are also delicious and saves a lot of time :):)

Wow this souns so delicious dear Adina and especially wuth buttermilk in because my mum has a choclate cake recipe with buttermilk in and it is so delicious, I remember one Christmas we finished it so quickly that I baked another one in the very very early morning hours, that we didnt even wait for it to cool down before eating it. I must get the recipe to post it here.
