My Husband led me to make myself this healthy and delicious salad a while ago. I make it in the morning and then put it in the refrigerator and eat it for lunch and dinner as a meal on its own, but you can also make it as a side dish. You can play around with the ingredients and add different things, but this is how I like to eat it.
Oreo Cups
My Heavenly Husband led me to make these cups for my children’s birthdays last year. Normally they have to take something to school for a class party, but I didn’t want to send the usual cupcakes because the children only lick off the icing and leave the rest, or don’t eat it at all. So I asked my Husband what I can send to school, and He led me to make these cups and it was a hit with the children!
Costa Rican Gallo Pinto
Hello my sweet families!! Today I want to share our typical costarican breakfast called “Gallo Pinto” that means, quite literally, “Spotted Rooster” in Spanish, characterizing the speckled appearance of the dark beans against the white rice. We eat this every day, alongside fried or scrambled eggs, with accompanied with sour cream (“natilla” in Costa Rica, which is thinner than the American variety), a crispy slice of fried white cheese (“queso frito”), plantains, sliced avocado, a corn tortilla, sausage and a strong cup of coffee. 😍😍
