A while ago I asked my Husband if there is anything I can do with leftover meat to make it interesting for the children the following day, and He led me to make a stew from the leftover meat. I made this specific stew last night, I had 4 pork chops left from the previous night, but you can use any meat you have left. You can serve it with rice or couscous and vegetables.
Ingredients:
Leftover meat
2 medium onions, any variety
1-2 Tablespoons olive oil or any oil you prefer.
Garlic to taste
Salt and Pepper to taste
Sweet Basil / Parsley to taste (or any herbs you like to add to stew)
200ml Beef Stock
1 Tin chopped and peeled tomatoes (I used tomato and green pepper relish)
1 Teaspoon of sugar to add to tinned tomatoes
Optional Vegetables Ideas to add while the stew cooks:
1/2 Cup Grated Carrot
1/2 Cup Chopped Green / Yellow / Red Pepper
1 Cup finely chopped spinach
1 Cup Mushrooms
Method:
1: Chop the onions
2: Cut meat into small cubes
3: Fry onions with garlic until soft and brown
4: Add meat, beef stock and herbs to onions and mix well
5: Add tinned tomatoes, vegetables (optional) and sugar and simmer for about 20min until the sauce thickens and vegetables is cooked, add more water if required.
6: Serve with rice, couscous, vegetables or bread
